The Wine

MON was born in 2020 as a single-varietal interpretation of Xarel·lo Vermell, an indigenous pink-skinned grape that remained in the background for years.

Its production using the traditional method allows the freshness and identity of the variety to be combined with the depth acquired during its evolution in the bottle.

Xarel·lo Vermell provides structure, texture, and a singular aromatic expression, where delicate fruit, citrus, Mediterranean herbs, and a subtly saline background coexist.

The bubbles appear integrated into the wine, accompanying its journey without hiding the character of the grape.

The result is a precise, deep sparkling wine that is difficult to compare. An almost forgotten variety that finds a new way to remain.

TASTING NOTE

Appearance

Pale and luminous hue, between soft gold and coppery pink, with reflections that reveal the skin of the Xarel·lo Vermell.

Fine, continuous, and well-integrated bubbles, with a slight visual density.

Nose

Precise and changing, with citrus peel, grapefruit, peach, and delicate red fruit.

Notes of fennel, dried flowers, and Mediterranean herbs appear later, accompanied by hints of fine bread and nuts resulting from the evolution in the bottle.

The overall profile maintains freshness and definition, with a mineral and slightly saline background.

Palate

Fresh and precise entry, with fine bubbles that progressively melt into the texture.

TERROIR

Place

MON is born in the Mediterranean landscape of the province of Barcelona, where Xarel·lo Vermell maintains a historical relationship with the Penedès vineyards.

The light, ventilation, and calcareous soils favor balanced ripening and help preserve the freshness necessary for a long evolution in the bottle.

Here the variety finds a precise and genuine expression, marked by fruit, texture, and a subtle saline tension.

A known origin viewed through an extraordinarily unusual grape.

Climate

CRAFT

Method

MON is made exclusively with Xarel·lo Vermell using the traditional method.

The second fermentation takes place inside the bottle itself, where the wine evolves slowly in contact with its lees.

Time integrates the bubbles, expands the texture, and transforms the initial freshness into a deeper and more complex expression. The aging does not intend to cover the singularity of the variety, but to reveal it with greater precision.

The result is a sparkling wine with a vinous character, fine bubbles, an enveloping texture, and a freshness capable of sustaining the entire journey.
